槐花的營養價值

每100克槐花鮮品含蛋白質31克,脂肪0.7克,碳水化合物15克,鈣83毫克,磷69毫克,鐵3.6毫克,胡蘿卜素0.04毫克,維生素B1 0.04毫克,維生索B2 0.18毫克,炯酸6.6毫克,維生索C66毫克。花蕾含豐寓的蘆丁(蕓香苷),水解生成槲皮素、葡萄糖及鼠李糖;并含有樺術素及槐二醇。花也含蘆丁,但含量較少。

食用方法

食用部位為豆科(蝶形花亞科)植物槐的花及花蕾。以槐花為原料制作的菜肴及其食療作用如下:

(1)槐花酒槐花蕾100克,白酒750毫升,白糖適量。摘取即將開放的槐花蕾,裝入紗布袋中,與白酒同裝入容器內,加入適量白糖,密封,兩個月后即可飲用。功效:降血壓,增強血管壁、防止動脈粥樣硬化、健胃消食、消除疲勞、防中風等。

(2)槐花飲陳槐花10克,粳米30克,紅糖適量。先煮米取米湯。將槐花研面調入米湯中,放紅糖適量調服。功效:涼血、止血、清肝降火,適用風熱內擾引起的大便便血、目赤、痔血等病癥。
